The Somerset Camembert is a rich, creamy cheese with a delicate, edible white rind. The curd of the cheese softens as it ages, taking on a consistent butter or straw colour and a richer flavour. Locally produced by Lubborn Dairy in the heart of the West Country, Cricket St. Thomas, Chard, Camembert is an award-winning soft cheese made from 100% British milk. Lubborn milk is gathered from committed regional farmers in the West Country to ensure the greatest quality and freshness.

After pasteurisation, a selection of cultures is added to the milk, and the milk is gently coagulated into the curds that constitute the cheese using vegetarian rennet. Curds are chopped into cubes before being placed in moulds. The moulds are then rotated three times to drain the whey evenly. After being removed from the mould and mildly salted, the cheeses are racked and stored in specialised maturing facilities. Over the course of ten days, a characteristic edible white coating develops on the cheese.

For a more Somerset flavour, we recommend serving it with cider or a fruity, light-bodied red wine such as Beaujolais! A straightforward appetiser would be toast with grilled Camembert slices and chopped roasted walnuts.
